We have backups running all day long, and we store up to 7 days worth of data. We use these backups for our personal disaster recovery reasons. If a client needs to retrieve something from a backup they will have to use their annual instance, or be charged for the job.
Specifically to emails, in your store setting it says emails are archrived for 1 year. We do not allow to store it for longer than 1 year because our storage is currently on SSD harddrive and it is very expensive to use it for storing emails. We never intended to be a storage company or email provider, but we do offer it for convenience and marketing purposes.
So for example if there is a backup today (6/5/2014), then all emails before 6/5/2013 will be removed tonight. The 7 day backup will store emails in the date range of 6/5/2013 - 6/5/2014.
Unfortunately any emails before 6/5/2013 will be deleted and there is no way to get them back.
If you require the storage of your emails, we recommend that you backup them up using Mozilla Thunderbird via IMAP and then move them to a folder or backup file on a local computer.
